So when we noticed Cinco de Mayo 2021 happens to fall on a Wednesday, we decided there’s no reason we can’t make a weeknight feel special. To kick off our mid-week fiesta, we put together a menu filled with classic favorites and new twists alike. You’ll find two starters, two entree options for veggie and meat-eaters, plus a decadent dessert. And it wouldn’t be a celebration without a great cocktail, so we’ve got three words for you: Spicy Grapefruit Margarita.

In place of meat, you’ll use roasted chickpeas and cauliflower florets to get that same delicious experience. The secret? Once your chickpeas and cauliflower have finished roasting, you’ll toss them with some orange juice, zest and hot sauce for an amazing punch of flavor. From there, you’ll assemble your quesadillas, grill until golden, top with smashed avocado (a must) and serve.
