Cinco de Mayo Menu Plan

Given the wild year we’ve all had, we’ll take any excuse to celebrate. So when we noticed Cinco de Mayo 2021 happens to fall on a Wednesday, we decided there’s no reason we can’t make a weeknight feel special. To kick off our mid-week fiesta, we put together a menu filled with classic favorites and new twists alike. You’ll find two starters, two entree options for veggie and meat-eaters, plus a decadent dessert. And it wouldn’t be a celebration without a great cocktail, so we’ve got three words for you: Spicy Grapefruit Margarita.

Best Ever Guacamole

 

Whenever a recipe claims to be the best, it’s worth taking note. And what we love about this version is that Maria of Two Peas & Their Pod not only shares her step-by-step process but also gives some really helpful tips along the way. From using perfectly ripe avocados (look for dark green or purple-ish) to freshly squeezed lime juice to seedless jalapeño, she shares little ways to take your guac from bland to best. What’s even better is that this recipe is  the ultimate blank-slate to customize. Whether you mix in extras like garlic, tomatoes, roasted corn, diced mango or chipotle peppers is entirely up to you!

If you thought delicious Mexican Street Corn was something you could only order at a restaurant or food truck, think again. Ashlea of All the Healthy Things is showing us that even the best eats can be easily made at home. Start by tracking down some fresh sweet corn and ensuring you’ve got all the extras (sour cream, cotija cheese, cilantro, lime juice, and spices) on hand. When it comes to cooking, you can either grill or roast your corn in the oven and make your lime crema in the meantime. When the corn is nice and tender, drizzle your crema, sprinkle your toppings, and enjoy.

It wouldn’t be a Cinco de Mayo menu without tacos. And while you can’t go wrong with any variety, fish tacos might very well be our favorite. From the flaky fillets to the crunchy slaw to the zesty crema, it’s perfection on a plate that you can easily make in no time. For this recipe, you’ll bake or grill your tilapia fillets and whip up your slaw and crema on the side. What sets this crema apart is the addition of coconut cream that takes these tacos to a whole new level.

Crispy Chickpea and Cauliflower Quesadillas

 

While some couldn’t imagine a quesadilla without their favorite chicken or carne asada, we’d argue this version is even better. In place of meat, you’ll use roasted chickpeas and cauliflower florets to get that same delicious experience. The secret? Once your chickpeas and cauliflower have finished roasting, you’ll toss them with some orange juice, zest and hot sauce for an amazing punch of flavor. From there, you’ll assemble your quesadillas, grill until golden, top with smashed avocado (a must) and serve.

If you have yet to come across her incredible food blog, allow us to introduce Isabel of Isabel Eats. She’s a first generation Mexican-American who loves good food and shares authentic Mexican recipes, often with a special twist. Today she’s walking us through the classic Mexican dessert, Tres Leches Cake which features a light sponge soaked in three types of milk and topped with whipped cream and strawberries. What are the three types of milk that make up the tres leches, you ask? Whole milk, evaporated milk and sweetened condensed milk. The end result is a cake that’s moist, airy, and an absolute treat.

Spicy Grapefruit Margarita

 

If there was ever an occasion for a Spicy Grapefruit Marg, it’s on a Cinco de Mayo menu. This festive drink is a classic reinvented with pink grapefruit juice and tequila as the main stars of the show. To that, you’ll add a bit of fresh lime juice, agave nectar, and sliced jalapeño for that perfect spicy kick. Don’t forget to garnish your glass, salt your rim, and cheers to the best weeknight fiesta ever.
