Weekly Meal Plan + Shopping List

So far, October has been quite the busy month around the IDCO studio. Between renovating our new office space and launching several client process templates in the shop, work has managed to keep us on our toes, and we wouldn’t have it any other way. But when all is said and done, there’s nothing like setting things aside and sharing a meal with the ones you love at the end of a long workday.

In that spirit, we’ve put together an easy fall menu that’s made for busy families, with less time cooking and more time reconnecting with your favorite people.

Pumpkin Pasta in Garlic Parmesan Cream Sauce


Listen, if eating pumpkin EVERYTHING in October is wrong, we don’t want to be right. That includes this pumpkin pasta from Family Style Food that combines roasted squash, pasta shells, and the tastiest garlic cream sauce for a fun twist on Italian tradition. Toss in a cup or two of baby greens at the end, and this dinner is basically healthy.

Vegan Tomato Soup


Everyone’s favorite tomato soup is typically made with loads of heavy cream, but this variation uses full-fat coconut milk to get the same effect. It’s an awesome dairy-free alternative, and the secret is in the caramelized onions that’s so worth the extra effort. Pair with crusty bread, grilled cheese, or a side salad for a well-rounded meal.

Fall Harvest Skillet


Whenever we’re really short on time, skillet meals are our secret weapon. They’re essentially a one and done dinner, and they’re totally customizable with whatever ingredients you’ve got stocked in your fridge. This paleo-friendly fall harvest skillet combines squash, brussel sprouts, apples and chicken, but don’t be afraid to swap things around to make it your own.

Sarah of Broma Bakery definitely knows a thing or two about dessert, and she’s deemed this apple galette “easy peasy” for even the most inexperienced bakers. You’ll quickly make the dough in a food processor, layer in your apple slices, and pop it in the oven. While pies usually get all the attention, we’d dare to say this galette looks even prettier.

We typically turn to Tieghan for her amazing dinner recipes, but she also knows how to whip up a killer cocktail. For this seasonal spritz, you’ll use fresh apple juice or cider mixed with vodka, orange liquor, lemon, honey, ginger, and a touch of sage, if you so choose. It’s official: fall cocktails have never looked so good.
