So far, October has been quite the busy month around the IDCO studio. Between renovating our new office space and launching several client process templates in the shop, work has managed to keep us on our toes, and we wouldn’t have it any other way. But when all is said and done, there’s nothing like setting things aside and sharing a meal with the ones you love at the end of a long workday.
In that spirit, we’ve put together an easy fall menu that’s made for busy families, with less time cooking and more time reconnecting with your favorite people.

Listen, if eating pumpkin EVERYTHING in October is wrong, we don’t want to be right. That includes this pumpkin pasta from Family Style Food that combines roasted squash, pasta shells, and the tastiest garlic cream sauce for a fun twist on Italian tradition. Toss in a cup or two of baby greens at the end, and this dinner is basically healthy.

Everyone’s favorite tomato soup is typically made with loads of heavy cream, but this variation uses full-fat coconut milk to get the same effect. Whenever we’re really short on time, skillet meals are our secret weapon. Just as the name suggests, it’s a “toss everything on the pan” situation for hands-off cooking at its very finest.
