Weekly Menu Plan + Shopping List

We blinked, and somehow it’s already the last week of September. Fall produce has found its way into our kitchens, and despite the warmer temps, we’re more than ready to include a soup or two on the menu.

This week, we’re focused on all things seasonal eating, with apples, sweet potatoes, and figs in heavy rotation. We’ve aimed to minimize your grocery list with tons of ingredient crossover, and we have several E-A-S-Y dinners recipes (plus an apple bourbon cocktail!) to whip up in a pinch.

Easy Baked Ziti

 

Whenever carbs and cheese join forces, it’s safe to assume you have a delicious meal on your hands. However, this super easy baked ziti also sneaks in a full pound of fresh spinach, so it’s a meal you can feel good about, too. Serve it up with a seasonal side salad, and we’d quality this vegetarian meal as “healthy’ any day of the week.

Sweet Potato and Coconut Curry Soup

 

When cravings for a spicy soup night strikes, this is the one to turn to. You’ll be using a blend of curry powder, garam masala, turmeric, ginger, cumin, and chili powder, and believe us when we say this blend packs a flavor punch. Make a double batch for leftovers, and don’t forget the coconut flakes to top.

Nothing says fall like a good skillet dinner, and this one involves the ultimate combo of sliced apples and onions with the juiciest cider-brined pork chops. The best part? It all comes together in roughly 20 minutes.
