IDCO Weekly Meal Plan + Shopping List

Hello + Happy Monday! It seems like this week, we are all at different stages of self-isolation. Some of us are back at work and back to a semi-normal routine, while still more of us are working from home and only venturing out for short periods of time. While everything is still a little off-balance and up in the air, I hope these weekly menus and grocery lists are one more thing you can take off your mental to-do list. 

As for us, we are still working from home. Food-wise, that means more baking, more cooked lunches, and more time to test new recipes! This week’s lineup is not to be missed. You’ll find

For us, a weeknight meal means ready in under an hour, not too indulgent, and really good. All of these check those boxes + make great lunch leftovers if you’re into that.

Easy Creamy Spinach Stuffed Salmon

Quarantine has given me a good opportunity to try out recipes I usually wouldn’t. I was not a huge fan of salmon with cream type sauces until this recipe. So good and don’t forget the hot sauce! I am serving with an arugula salad and lemon-y orzo.

As soon as I saw this recipe post this week, I filed under “making immediately.” We will be testing this one together, but I’ve never had any recipe from Halfbaked Harvest that wasn’t delicious.

Homemade Brioche 

This week, I’m mixing it up a little and working on my bread skills. I thought it would be the perfect time to try brioche since I’ll be needing some for the brunch bake! If you aren’t into baking, skip this part and pick out some brioche at the store!

This is the grown-up lemonade of my dreams. You’ll find me sipping one of these on the porch swing every day around 5.

this week’s shopping list

 

PROTEIN
8 oz ground pork sausage (or ground sausage of choice)
13 large eggs
1 lb boneless skinless chicken breasts
4 [8-ounce] center cut salmon filets be sure to select a thicker, fattier salmon

PRODUCE
1 small shallot
6 cups shredded romaine
1 cup cherry tomatoes
2 Persian cucumbers
10 lemons
1 red onion
1 yellow onion
10 cloves garlic
1 bunch broccolini
6-8 cups cauliflower
Butter lettuce cups
1 inch knob fresh ginger

HERBS
½ cup chives
2 tbsp flat leaf parsley
1 tbsp oregano

PACKAGED GOODS + CONDIMENTS
Maple syrup
1 lb pizza dough (store bought or homemade is fine)
Olive oil
Burger buns
1 can cannellini beans
10 oz. frozen, chopped spinach
2 tsp hot sauce of choice
1 cup farro
½ cup oat flour (if you have oats, just pulse in a food processor!)
Mayonnaise
Barbecue sauce of choice
4 cups all purpose flour
¼ cup granulated sugar
1 tbsp active dry yeast
Crushed peanuts
1 can chickpeas
Sriracha
½ cup soy sauce
¼ cup brown sugar
1 tbsp rice vinegar
2 tablespoons red wine or apple cider vinegar
2 tablespoons tahini
1 tablespoon dijon mustard
2 teaspoons honey
1 tbsp sambal oelek (or a spicy chile paste)
1 tbsp toasted sesame oil
½ tbsp cornstarch
Ciabatta (or bread of choice for salad)
Balsamic vinegar

SPICES
Crushed red pepper flakes
Cumin
Smoked paprika
1 tsp Cajun seasoning

DAIRY
12 oz mozzarella
½ cup shredded parmesan
¾ cup unsalted butter
3 cups heavy cream
½ cup whole milk
8 oz feta
4 tbsp cream cheese

EXTRAS
Bourbon
Burger dressings of choice
Salad toppings like avocado, olives, etc.
