Over the past several weeks, our holiday menus were full of indulgences — and rightfully so! But as we step into January, we’re all feeling ready to hop on the healthy train with lightened up meals that prioritize plants and minimize sugar. To start, we’ve put together a (nearly) meatless menu as the perfect reset button for that first week of January. With fresh salads, comforting soups, and our favorite vegetarian pizza, we’re excited to get our 2021 meal planning efforts off on the right foot.

By now you know we’re big fans of Inspired with a Twist, and her Mushroom and Goat Cheese Pizza might be one of our favorite recipes to date. To save time on busy nights, start with a store bought pizza dough — we especially love Trader Joe’s garlic and herb variety. From there, simply top, bake and enjoy a restaurant-worthy dinner any night of the week.

If you’re looking to eat healthier in January but find yourself still craving pasta, zoodles are the answer. This version adds a super flavorful kick with soy sauce, sesame oil, and fresh garlic + ginger. Top off your dish with a serving of crispy tofu, and you have a meatless meal you can feel really good about.

Who doesn’t love a steamy bowl of soup on a cold January day? This one uses roasted and blended veggies as your base, with a can of coconut milk for added creaminess. To serve, top with extra herbs, scallions, pepitas, or even bits of bacon if you feel so inclined.

While this pasta dish features parm cheese and noodles, it pack a healthy punch with the addition of broccoli rabe, sun-dried tomatoes, and plant-based Italian sausage. PS — for a vegan-friendly meal simply omit the cheese and you’re good to go.

A healthy and delicious lunch option in 15 minutes? Sign us up! Just toss together some cooked quinoa (cook the day ahead for easier prep), chopped veggies, and a sesame ginger dressing that brings it all together. It’s light, it’s flavorful, and it’s also 100% vegan.

Just because we’re all trying to reach new health goals in 2021 doesn’t mean we won’t want a sweet every once and awhile. These oat bran muffins are perfect for breakfast or a mid-day snack, and they even feature a secret ingredient — sweet potatoes. Whip these together whenever you some spare time and they can easily be frozen and thawed as you need them.
