Are you team salad for dinner? Most times, our answer would probably be no, but on this week’s IDCO menu, we’re highlighting two recipes that helped us reconsider. We’re talking entree-worthy salads with fully customizable options to pile up with toppings to your heart’s content.
In between all the fresh salad goodness, we’ll be feasting on a brie and basil pizza, Mediterranean grilled shrimp with veggies, and a few indulgent treats to satisfy your sweet tooth. Oh, and for anyone looking to up their cocktail game with week, we’ve got a Strawberry Basil Margarita with your name written ALL over it.
Pizza for dinner is always a good idea, especially when creamy crème fraîche and melted brie are involved. Leah of Freutcake developed this recipe using gorgeous ripe tomatoes (go grab them from the garden!), flavorful garlic cloves, and fresh basil galore. She recommends picking up Trader Joe’s refrigerated pizza dough to save some time, or make your own if you’re feeling up for the task. Just pair this pizza with your favorite summer wine and enjoy a fun dinner al fresco!

Andie Mitchell dubbed this a quintessential summer meal, and we couldn’t agree more. Everything comes together so quickly on the grill, while the marinated chickpeas “cook” themselves. She recommends serving this dinner with a generous dose of salty feta cheese (always a plus, in our book) and a crisp glass of delicious rosé.

There’s so much produce currently in-season, so we’re going super minimal on the meat and letting the fruits and veggies take the spotlight. Exhibit A: this grilled romaine salad topped with lemon-herb white beans and a creamy Caesar dressing.
