I’ll be sharing my favorite fall-inspired pastas, curries, and creamy skillet meals to try on your menu. These foolproof recipes are approachable enough for weeknight dinners yet flavorful enough to impress everyone at your table. It’s cozy meal season, and I’m so ready to lean in.

I’m convinced there’s nothing better than a creamy, dreamy bowl of risotto after the end of a long day. It’s the ultimate comfort food, and I particularly love this version from Love & Lemons. It features butternut squash and fresh fall herbs (rosemary or sage—take your pick), plus a splash of white wine for good measure. You can save a TON of time by purchasing pre-cut butternut squash from the frozen section. Just add a few extra minutes of cooking time, and you’re set.

I’ve made these braised chicken thighs for all sorts of occasions. Weeknight meals, dinner parties, holiday celebrations—you name it. People are always intrigued by the idea of roasted grapes with chicken, and after a few bites they’re always won over. The red wine and balsamic pan sauce is next-level, but the real MVPs are the burrata cheese and drizzled honey.

Soup isn’t the only cozy meal to make this season. Case in point? This Cauliflower Orange Gnocchi that packs a ton of flavor in a one-pot meal. In my opinion, skillets meals are the best soup alternatives. The clean-up is a breeze, but the meal itself is even better. Half Baked Harvest has no shortage of fall-inspired skillet meals, but this one is a Casey household favorite. The broth, cream, and white wine make a heavenly pan sauce, and marinated artichokes pair so well with the chicken.

Whether you follow a vegan diet or not, this healthy sweet potato curry happens to be incredibly delicious. It’s made vegan with canned coconut milk and is naturally gluten-free. If you’re intimated by perfecting a curry, don’t be. Jessica walks you through the right balance of spices, all of which you probably already have on hand. Served it over a bed of steamed brown rice and a sprinkling of cilantro.

If I’m feeding a crowd, I like to make this in an oversized skillet and double the recipe. You’ll have enough to feed a small army, and everyone will stand in line for seconds.

Is it even fall if you’re not cooking with pumpkin? Not in my book. This recipe is such an easy way to dress up store-bought tortellini with the best seasonal flavors. The roasted and caramelized pumpkin is so delicious with the cheese-laden pasta, and the toasted hazelnuts add just the right amount of crunch.
