According to the calendar, spring is finally here. That means we’re shifting our menus to focus on bright flavors, vibrant colors, and in-season produce every chance we get. With that idea in mind, we’ve built out a spring meal lineup featuring everything from a Dijon Chicken Pasta to a Bright Citrus Salad to a Classic Shortbread Lemon Bars to satisfy any sweet tooth. You’ll find four dinners plus a lunch, dessert, and cocktail for a week of incredible eating, day in and day out.

We’re big believers that tacos should be a weeknight dinner staple. They’re easy, they’re delish, and they’re entirely customizable to any special diet. This veggie version is perfect for a Meatless Monday, using roasted vegetables, canned black beans, and a chorizo spice blend for a rich smoky flavor. Don’t be afraid to mix things up with whatever veggies you have on hand for a “clean out the fridge” dinner that looks just as good as it tastes.

We came across this dinner idea while pursuing Jocelyn’s Instagram page, and it grabbed us from the get-go. It’s a simple spring pasta with spiced shrimp, sautéed leeks, and toasted breadcrumbs for an added crunch. While there’s no official recipe, per se, this is one of those meals you can whip up with little instructions required. Just prepare each ingredient, toss together with your favorite spices, and drizzle with a quality olive oil to taste.

It’s loaded with salami, onions, olives, jalapeños, and one secret-sauce ingredient—a generous drizzle of honey! The result? An unexpected flavor combination that guaranteed to become a new favorite.

If you’re looking to incorporate more greens into your dinner plans, spring is the perfect time to do it. Just add a heaping portion of arugula to your favorite pasta dish for a meal that’s all about a healthy balance. For this recipe, you’ll toss seasoned chicken, cannellini beans, Parmesan cheese, and several cups of arugula or any fresh greens. Top with lemony Dijon dressing and dinner is served.
Nothing says spring like a good dose of citrus. *Enter* this salad from Leah of Freutcake that incorporates grapefruit, kumquats, and three types of oranges for a serious citrus kick. Toss together with fresh salad greens, sliced avocados, roasted pistachios and several dollops of creamy burrata cheese. Drizzle with your favorite vinaigrette (or make your own), and you’ve got a lunch, side dish, or ‘anytime’ snack that’s seasonal eating at its finest.

So far, we’ve shared quite a few healthy meal options, but it wouldn’t be an IDCO menu plan without a good sweet. Luckily, we came across these zesty lemon bars from Zainab of A Classic Twist. They feature a buttery shortbread crust, a tangy lemon filling, and a dusting of powdered sugar for good measure. It’s official: spring-inspired desserts have never looked so good.

If you’re on the hunt for a new seasonal cocktail, allow us to introduce the Aperol Spritz. This light, refreshing sip comes from Italy, where it’s a staple on nearly every cafe menu. To make, simply fill your glass with ice, add chilled Prosecco, Aperol, and a splash of sparkling water. You’ll garnish with fresh orange slices and sip to your heart’s content.
