For so long, we’ve been looking for a resource that offered balanced, delicious meals that were relatively quick and came with a ready-to-shop grocery list. We know so many of you are business working professionals or entrepreneurs like us and find yourself eating take-out or snacks for dinner more often than you’d like. Nutrition is so important, and your work truly depends on your health and mental focus.
All that said, starting now, we are rolling out a weekly menu with seven tried-and-true recipes: four simple weeknight meals, a brunch recipe, one treat, and something to bake for a neighbor or friend. We are so excited to share some of our favorite meals with all of you and can’t wait to hear what you think of them! Attached, you’ll find a full grocery list. This list will not include pantry staples like butter, oil, flour, salt, and pepper, so be sure to take stock before you head to the store (or to your favorite grocery delivery app).
For us, a weeknight meal means ready in under an hour, not too indulgent, and really good. All of these check those boxes + make great lunch leftovers if you’re into that.

Kale Caesar with Sweet Potatoes and Crispy Chickpeas
Tips: Double the caesar dressing recipe and keep it on hand for salads all week. It is GOLD.

For those nights when you need something warm and comforting, but full of vegetables and done in less than an hour. If you don’t have an instant pot, just put it in your crockpot in the morning!

That leftover tahini from the kale caesar finds its perfect use. These bowls are also fantastic for meal prep.

Weeknight Thai Chicken Meatball Khao Soi
We keep this recipe on repeat. Don’t skimp on the egg noodles.
These recipes are made for slow Saturday mornings + pairing well with a bloody mary is a requirement.

Is it authentic? Nope. Does it involve homemade tortilla chips? Yep.
After a long week, nothing is better than enjoying a treat, especially if you are able to make it with friends or kids.

No-Bake Almond Butter Cup Bars
Every time I make these, everyone asks for the recipe and then proceed to be shocked that it’s pretty healthy.
I like to have ingredients on hand in case someone needs a pick-me-up, whether it’s a sick neighbor or a friend going through a tough time.
