Weekly Menu Plan + Shopping List

There’s no question summer 2020 has not gone according to plan. For most of us, it’s been a season of uncontrollable twists and turns, but if there’s one thing we CAN control, it’s the food that goes into our bodies.

While meal plans and delicious eats certainly aren’t a cure-all for the world, we’ve found it to a great source of comfort. Gathering our families around the table to enjoy an incredible dinner has been one of the very best “constants” in these crazy days, and we hope it’s provided you with a small source of comfort, convenience, and even some joy, too.

With that, we’re laying out this week’s meal plan that has a little something for everyone. From Black Bean Burgers for grilling to Green Shakshuka for your brunching adventures to White Wine Sangria for those nights on the patio, we’ve got a meal plan made to impress everyone at your table.

Chipotle Black Bean Burger


Meat-alternative burgers are having a moment, and Love & Lemons is going to show us how it’s done. This recipe has a nice chipotle kick with some tangy flavor thanks to the additions of balsamic vinegar and tamari. Oh, and did we mention the best part? You can mix up all the black bean patties in one single bowl. Throw these on the grill along with a side of diced red potatoes and you a delicious summer dinner with virtually zero clean-up.

Citrusy Chicken Thighs


Nothing says summer like citrus, and these citrusy chicken thighs totally deliver. You’ll use a combo of lime and lemon for a zesty punch, with just some fresh pepper and salt to balance out the dish. With only six ingredients on the lineup, getting dinner to the table has never been easier.

Salmon Asparagus Orzo Salad


We previously discussed our stance on serving salad for dinner, but this particular salad involves pasta, salmon, and the best summer flavors! We love that it can be served warm or cold (hello, lunch leftovers!) and is totally customizable for your tastes. Go ahead and mix in artichokes, capers, olives, or any basically any extra greens you’ve got—the possibilities are endless.

Greek Chicken Pita with Whipped Feta


Any dinner recipe that involves whipped feta is a total win in our book. Just add the seasoned chicken meatballs, the Mediterranean-style veggies, and a freshly warmed pita bread, and you’ve got a healthy meal in 30 minutes flat.

Green Shakshuka


If you have yet to try shakshuka, allow us to introduce your new brunch favorite. This dish comes from Northern Africa and involves poaching eggs in tomato sauce, all with a nice, spicy kick. Sarah of Broma Bakery put a twist on tradition using green peppers, green tomatoes, and jalapeno peppers for those who love a savory morning menu. PSA: don’t forget the crusty bread for dipping!

Vegan Yogurt Parfait Breakfast Popsicles


So technically these popsicles fall into our sweets category, but if you want to eat these for breakfast, who are we to judge? They’re the definition of a healthy treat, made with (vegan) yogurt, frozen berries, and a sprinkling of granola. Pop them in your freezer for a nutritious snack any time of day.

If you ask us, a pitcher of white sangria and summer nights go hand-and-hand. Whip this up for your (socially distant) hangouts, and you’ll have a refreshing mixed drink option everyone will love.
