Another Thanksgiving has come and gone, but one thing hasn’t changed: our ongoing quest for really good food. We’re always looking for the most delicious, seasonal, weeknight-friendly meals, and that’s where our IDCO Menu Plan comes into play. Per usual, we’ve curated four dinnertime meals for those extra busy nights, but it doesn’t stop there. We also found the perfect brunch idea, a sweet for your weekend baking adventures, and an early winter cocktail that’s officially calling your name. It’s a menu filled with both healthy and more indulgent options, so take your pick and let’s get started.

After cooking up a storm over the Thanksgiving holiday, it’s time to slow down and keep things simple. Think one-pot, minimal ingredients, and ample opportunity for leftovers. This Wild Rice, Chicken, and Veggie Pilaf accomplishes all of the above, and it’s total comfort food perfection.

Did anyone else manage to eat their weight in cheese-heavy dishes this past weekend? Because we certainly did. To help hit the “reset” button, we’re putting this dairy-free pasta on the menu that’s made using coconut milk and vegan “dairy” products.

French Onion Soup

 

Most of us stocked up on pantry staples like onions, stock, and fresh herbs in preparation for Thanksgiving, so what better time to use up those leftover ingredients? Once again, we’re going with a one-pot, fuss-free recipe for weeknight dinners that comes together in a snap.

Red Wine-Braised Short Ribs

 

This recipe feels admittedly fancy for a weeknight meal, but hear us out on this. These short ribs require a tad bit of prep work up front, but next, they’re transferred to the crockpot where they practically cook themselves. Just add your favorite bottle of dry red wine, and you’re in business!

Crustless Quiche

 

Quiche is always a brunchtime favorite, but this version makes things easier (not to mention, healthier!) by leaving out the crust. It calls for Italian sausage and spinach, but feel free to customize the recipe with whatever add-ins are already sitting in your fridge. Serve it for brunch OR dinner — it’s a totally acceptable meal any time of day.

Coconut Cinnamon Rolls with Ginger Cream Cheese Frosting

 

It’s safe to assume we’ve all eaten our fair share of sweets over the past week, but that’s not going to stop us from baking something delicious should the craving strike. These cinnamon rolls are the perfect weekend activity with a ginger + vanilla + nutmeg cream cheese frosting that takes them to the next level. Serve it with a fresh cup of coffee, and you have a Sunday morning done right.

Apple Cranberry Sangria

 

When Friday night rolls around, everyone needs a good cocktail in hand and this is our new late fall / early winter favorite. It’s a classic white sangria infused with apples and cranberries for a more seasonal kick. Have some leftover herbs on hand like fresh thyme or rosemary? Throw it on as garnish for a drink that looks just as good as it tastes!
