Here at IDCO, we tend to follow a loose theme as we plan out our weekly menus. It keeps us inspired, it gives us direction, and it makes life WAY in the realm of infinite possibilities. The menu theme this week? It’s all based on the concept of dinner in a bowl. Think grain + protein + veggies + a flavorful sauce to tie it all together. We’ve got everything from steak bowls to vegan veggie bowls, and we’ve even added a seasonal dessert and cocktail into the mix. Let’s get cooking!

Coconut Curry Noodle Bowls


If a noodle bowl isn’t currently in your weeknight dinner lineup, this recipe is about to change that. It’s loaded with veggies, features some bold Thai flavors, and it just so happens to be both vegan AND gluten-free. You’ll be making your own creamy curry sauce, but rest assured it’s incredibly simple and super delicious.

Honey Chipotle Chicken Bowls with Spicy Lime Tahini Dressing


This recipe from Ashlea of All the Healthy Things is a prime example of why we love dinner in a bowl. Just start with brown rice (or your choice of grain), add in the protein, layer in all the veggies, and top with a spicy lime tahini dressing. It’s cooking made simple, and it also makes for the best lunch leftovers.
