One of our favorite ways to decompress after a busy day is listening to a podcast with a glass of wine in hand. And because good food is something we could discuss ALL day long, you’ll find Home Cooking on our podcast lineup whenever we’re in need of some fresh ideas.

This week’s IDCO menu was directly inspired by their latest episode which covered recipe ideas for all that summer squash hanging out in your kitchen. We’ve got everything from a Grain-Free Zucchini Flatbread to a Caramelized Zucchini Frittata, and a really cool anti-food waste Carrot Top Pesto to amp up any dish.

Crispy Salmon and Toasted Sesame Spinach


Have you cooked with farro before? If not, allow us to introduce the most underrated whole grain that’s guaranteed to top your favorites list. It’s got a nutty taste that’s similar to brown rice or barley, and it makes a nice base for any bowl-style dinner. This recipe combines farro with crispy salmon, sesame spinach, and thinly sliced radishes for a weeknight meal with tons of easy lunch leftover potential.

Rosemary Garlic Steak Kebabs


Kebabs are a summer grilling must, and this recipe puts a sophisticated twist on the summertime classic. To pull it all off, you’re going to use a combination of steak, baby potatoes, marinated grape tomatoes, and freshly chopped rosemary. The key here is to let your steak and tomatoes hang out in the marinade for at least 20 minutes, but we promise the extra legwork is 100% worth it.

Grain-Free Zucchini Flatbread


Calling all gluten-free, Paleo, or vegetarian eaters who love themselves some pizza! This recipe from Love Chef Laura gives you all the essence of the classic, without a hint of grain or cheese in sight. You’ll put that garden zucchini to work with a base of basil pesto for a delicious flatbread dinner you can make on repeat.

Steak Farro Bowl


Since you’ve already got farro in your shopping cart, we decided to include a second recipe to use up all that whole grain goodness. This summer bowl combines farro, steak, and your choice of fresh veggies for a meal that’s equal parts nutritious and delicious.

Caramelized Zucchini Frittata


Zucchini is making yet another appearance in our weekly meal plan with a homemade frittata that deserves a spot on your brunch list. This dish from Naturally Ella calls for zucchini and caramelized onions, but the beauty of frittatas is that they work with literally ANY veggies you’ve got on hand. Top off your dish with a sprinkling of basil you’ll have a fresh, savory breakfast to recreate time and time again.

This week, we came across the Forever Brenna blog, and she gave us a much-needed reality check about food waste in our country. From farms to grocery stores to our own home kitchens, we throw away an enormous amount of food, but it doesn’t have to be that way. She’s sharing her recipe for Carrot Top Pesto using the carrot greens we all toss out, and it’s inspired us to do better in our kitchens, too.

Rosemary Greyhound


What exactly is a greyhound, you ask? A combo of grapefruit juice + gin or vodka. It’s the kind of drink you’ll find at hip restaurants made for the ‘gram, but we promise it’s just as easy to whip up at home. The only “extra” requirement is a rosemary simple syrup, but Boxwood Avenue is giving us the step-by-step to make it in a snap!
