This week’s IDCO menu was directly inspired by their latest episode which covered recipe ideas for all that summer squash hanging out in your kitchen. We’ve got everything from a Grain-Free Zucchini Flatbread to a Caramelized Zucchini Frittata, and a really cool anti-food waste Carrot Top Pesto to amp up any dish.

Have you cooked with farro before? If not, allow us to introduce the most underrated whole grain that’s guaranteed to top your favorites list. It’s got a nutty taste that’s similar to brown rice or barley, and it makes a nice base for any bowl-style dinner. This recipe combines farro with crispy salmon, sesame spinach, and thinly sliced radishes for a weeknight meal with tons of easy lunch leftover potential.
Kebabs are a summer grilling must, and this recipe puts a sophisticated twist on the summertime classic. To pull it all off, you’re going to use a combination of steak, baby potatoes, marinated grape tomatoes, and freshly chopped rosemary. The key here is to let your steak and tomatoes hang out in the marinade for at least 20 minutes, but we promise the extra legwork is 100% worth it.
